Fresh Blueberry Pie ....with a secret!

A mouth watering blueberry pie, made with delicious fresh blueberries on a Gluten Free crust. The secret ingredient gives it just a little extra zing, but it is even wonderful without, if you don't happen to have the secret ingredient, a splash of blueberry wine, on hand.

 

1. Bake the pie crust and let cool. See Perfect GF Pie Crust Recipe

2. Boil water in kettle

3. Mix together

1 package of gelatin (enough to set 1 cup liquid)

1/3 teaspoon Vitamin 'C' crystals

 2 tablespoons sugar

4. Add above dry ingredients to 1/2 cup boiling water and stir until dissolved, let cool.

5. Wash about 2 pints freshly picked blueberries in a bowl of cool water, debris will float to the top and you can skim it off removing any stems. Rinse 2 or 3 times until water is clear.

6. Add 1/2 cup blueberry wine, (the secret ingredient) to the room temperature gelatin mixture.

7. Pour the gelatin mixture over the blueberries and gently stir to make sure the blueberries are all coated with the gelatin and wine mixture.

8. Pour blueberries and gelatin mixture into previously baked GF pie shell and refrigerate until set, about 1 hour.

9. Garnish with freshly whipped cream.

Whipped cream:

Add a few drops of pure vanilla and 1 tablespoon of sugar to 1 cup whipping cream. Whip and using a cake decorating tube, pipe into rosettes around the edge of the pie before serving.
