with heart shaped lattice work top crust
Specially developed in Gluten Free Trina's home kitchen.
The most delicious cherry pie you have ever tasted. Our wonderful neighbours have a cherry tree in their back yard, and I look longingly out our kitchen window each year. They both appeared at the door with this basket of cherries and so I just had to make a pie! or two ... They were delicious fresh too and I had to really work fast to make sure there were enough for some pies.
Step 1. Make the GF pie crust, below, and place dough in pie plate ready for cherries and put the pie crust in the freezer.
Roll out dough for top lattice heart crust between two sheets of wax paper that you have placed on a cookie sheet. Just spoon the dough out onto a piece of plastic wrap and then placing a layer of plastic wrap on top, roll out the pie dough. Place the cookie sheet with the dough on it into the freezer.
Step 2. Pit freshly washed tart cherries using a tip from a cake decorating tube on your forefinger, or a cherry pitter. It will take about 2 to 3 cups of cherries for one pie. (or use frozen pitted cherries)
Step 3. Assemble the filling

Add to cherries and blend.
3/4 cups sugar
1/2 teaspoon cinnamon
a few drops of pure vanilla
1/4 teaspoon vitamin C crystals
if you can wait that long, and you want to prep the night before, let this mixture stand in the refrigerator and it will get juicy then next morning add this.
1 teaspoon corn starch
1 teaspoon tapioca starch
Step 4.
Put cherry filling into frozen pie crust, cut heart shapes from frozen rolled dough on the cookie sheet and place hearts in a design on top of the pie and then bake in a 350* oven for about 30 minutes until the cherries bubble and the crust is golden.
You can serve with ice cream or whipped cream if you like, but we ate ours just warm out of the oven and it was delicious!
Perfect GF Pie Crust
Mix together,
1 cold egg
1/2 cup vegetable shortening,
1/2 cup butter,
1 tablespoon vinegar
1 tablespoon brown sugar
A few drops of Vanilla
In separate bowl blend together
2 cups Trina's sweet rice flour mix # 2
1 teaspoon guar gum or (¼ teaspoon xanthan gum)
1/4 cup cold water
Mix together into a soft dough. Spoon some into a buttered pie plate. Using a plastic wrap smooth into place around the bottom and sides of the pie plate. Remove plastic wrap, pinch edges slightly. Fill with cherry mixture and Bake at 350*.
Trina's Sweet Rice Flour Mix No.2
1 3/4 Cups Sweet Rice Flour/Glutinous Rice Flour
1 1/4cups of potato starch ( not the same as potato flour)
1 cup of corn starch
1/4 cup of potato flour
Blend together, this makes about 4 cups of mix
